Here is a link to a website set up by people from Cruise Critic on a Celebrity cruise with an itinerary similar to ours. They set up lots of private tours (big ones for lots of people) in almost every port! Somehow I don't see any of us getting that organized, but it is still an inspiration. And here is another trip review from someone on a similar cruise, the Preismans.
Here are two private tour companies used by other Cruise Critic people in Italy: Unforgettable Tuscany and Limo in Rome. The Preismans used Marcello for their day out of Naples, and it sounded wonderful! In Athens some people used Athens Taxi.

I thought the Rome Limo had possibilities. Maybe the 1/2 day tour which was 180 euros (is that total or each)? I think is must be total so that would not be too bad. However the bus that you can hop on an off is also appealing. I think it is interesting that most of these companies do not put the price.
